Almond Butter-Apple Pie Smoothie

Any Apple Pie Smoothie recipe I've come across that is delicious seeks to replicate the apple pie a la mode idea using yogurt or thick cream to replicate the ice cream scoop mixed in with the fruit and the crust.  So, so yummy!  

I was experimenting and found that the following ingredients come together creamy, sweet, fruity and so satisfying as a dessert smoothie that you might never want to fuss around with pie crust again!

Into your Vitamix carafe put the following:

*3 Apples, sliced, core and seeds removed
*small nob of fresh Ginger, peeled and sliced or grated
*2 T. Maranatha Raw Almond Butter
*1-2 T. Raw Honey
*1 T. Cinnamon
*Pinch of Celtic Sea Salt (or to taste)
*1 C. Frozen Peaches (Secret Ingredient!)
*3-4 C. Almond Milk (I used Almond Breeze)

Whirl together until creamy smooth.  The Frozen Peaches bring out the 'apple' flavour more than apples do on their own (don't know why?).  Try it yourself and see if it is not ambrosia!

Cocoa-Banana & Fig Smoothie (Dairy-Free, Vegan, Gluten-Free)

Follow Me on Pinterest This is definitely one of those less-heathy, more nostalgic-for-chocolate-milkshakes smoothies. But as you can see above, it does have quite a lot of fibre and various phytonutrients going for it, so it is somewhat healthier than a choco shake.  It's a comfort food smoothie!  My husband is on an 8-day hike and I miss him already (and worry a little).

We're still enjoying fresh figs!  Today I made some fig jam that is absolutely the best jam I have ever eaten... I'll make sure you get the recipe (HERE).  Rather than using sugar, I thought that a fig would do (bananas are also sweet).

INGREDIENTS:
2 Frozen Bananas, peeled and chunked
1 Ripe, Fresh Fig, stem removed and quartered
2-4 T. Organic Cocoa (a Fair Trade brand is the most ethical)
1 T. Almond Butter (optional)
1-2 C. Almond Mylk

Whirl it up and enjoy!

Fresh Fig-Peach-Banana-Chard Smoothie


Oops.. I forgot to take a pic of the fruit for this smoothie, but it is, when all whirled up, your basic lovely green smoothie.  It's an August smoothie in these parts-- when the Fig and Peach and Chard converge, invite in the tropical Banana, hit the local water hole, and cha cha cha.  Sweet and Peachy!

My neighbour came over with a bag of peaches (in exchange for watching her yard a bit while she is away), and I froze a bunch of those slices for smoothies.  Then, when we went into her yard we noticed that her fig tree was drooping with lots of figs, screaming "harvest me! harvest me!" So, we did of course.  These are figs far superior to whatever our fig type is.  Two owners back the couple were Mediterranean (he was Greek, she was Italian, or maybe the reverse) but they had figs and peaches all over the surface of their house, a huge grape arbour in the back, and a persimmon tree. The persimmon and the figs got routed out by the next owner who preferred asphalt RV pads to ripe fruit.  The present homeowner likes the peaches, but I'm not sure about the figs.  I'll make her some jam with them, anyhow.

So, if you have all of the above ingredients, here you go: (or feel free to do your own version)
*1 frozen Banana
*2 fresh Figs
*2 fresh Rainbow Chard leaves and stems
*1/2 C. frozen Peach slices
*1-2C. filtered Water
Spin it all up in the blender!

And if you are rather apprehensive about combining all the fruits above together, believing that such a fruit salad mix might be harder to digest than just one or maybe 2 fruits, read THIS article by someone who has been a fruitarian-hygienist type raw vegan foodie and has done lots of research into the matter!





Blackberry-Fig-Avocado Smoothie-- Vegan, Dairy-Free, Gluten-Free, Ambrosia


Follow Me on Pinterest You know that I don't like to boast about all the fruit we are harvesting in our yard... you do know that, right?  Well, please forgive me today... I just can't help it... and I can't take the credit either, of course... that belongs to God!

Last year our son, the veggie farmer, looked over the pathetic little fig tree, the one that seemed to be 'cursed' (read Mark 11:13-14) and went about laying down some necessary lime and other minerals.  He said, "Watch it-- it will take off for you!" and, behold, he was right on.. this year the fig tree that had never treated us to more than 1 or maybe 2 fruits in the previous 6 years, suddenly produced a minor boom crop this year.  These are Green Figs, so while they look less ripe than Brown Figs, they are soft, and sweetly delicious.  My husband adores figs-- you might say he is a Fig Pig-- so I am also very happy that he gets to harvest and eat them before he goes out onto the North Coast Trail hike with his friend Brian in a few days. (He would have been so disappointed had he missed the ripe figs while on the hike).
So juicy sweet!
Okay, on with the Smoothie Recipe: (for about 20 oz. of Smoothie)

Combine the following in a high-speed blender (or other blender, in two batches):

  • 3 ripe, juicy Figs (minus the tough stems)
  • 1 C. Blackberries (I used frozen ones for the ice appeal)(Regular Raspberries would also be delish!)
  • 1/2 ripe, soft Avocado flesh
  • 1 C. Nut Mylk (as you can see, I opted for ready-made Almond Breeze-- use what you like)
  • Water as desired (I like to bulk mine up with water-- so hydrating)

Persons with Type 2 Diabetes who are trying to eat as healthy as possible from the Plant-based regimen will be happy to know that this is a body-friendly grouping of fruits, that, in season (do not eat the high glycemic dry figs and eat the fruit raw),  fresh and ripe, will just make you feel lovely in this smoothie!  Enjoy!
